Remember the haystack cookies from the 1970s made with fried chow mein noodles and a bunch of other unhealthy ingredients? Here's an updated take on these classic cookies. The result? A crunchy, sweet cookie -- each with 5 grams of fiber! Even if you think you can't cook, I promise that you can make these sweet treats.
1/2 box of Fiber One cereal (each box contains two sleeves of cereal; just use one)
1 10-ounce bag of chocolate, white chocolate, peanut butter or butterscotch chips
1. Melt chips until just melted and smooth -- about 1 minute in the microwave or 3-5 minutes in a double boiler.
2. Stir in cereal until well coated.
3. Spoon mixture onto a cookie sheet and chill until firm. Makes 24 cookies.
4. Refrigerate cookies in an airtight container.
